March Into Flavorful New Foods
With the beginning of spring just around the corner, I’ve been trying to eat healthier. On my quest, I’ve been testing my hand at cooking. Now that I’ve spent some quality time in the kitchen, I’m sharing some of my favorite recipes. I love them because not only are they quick and easy, they’re healthy and delicious! Give one of them a try.
Vegetable Hash
Ingredients
4 tablespoons olive oil
1 pound Yukon Gold potatoes, diced
½ pound fresh shitake mushrooms, diced
1 red bell pepper, diced
1 small acorn squash, diced
1 shallot, finely chopped
2 teaspoons garlic powder
1 pinch salt
1 pinch ground black pepper
1 cup chopped kale
4 sprigs fresh sage
Place oil in a large skillet over medium heat. Mix in potatoes, mushrooms, pepper, squash, and shallot. Season with garlic powder, salt, and pepper. Cook 25 minutes, stirring occasionally, until potatoes are tender. Mix kale and sage into skillet. Continue cooking 5 minutes, until kale is wilted. Serve and enjoy!
Six Can Chicken Tortilla Soup
1 (15 ounce) can Whole Kern Corn, drained
2 (14.5 ounce) cans Chicken Broth
1 (10 ounce) can Chuck Chicken
1 (15 ounce) can Black Beans
1 (10 ounce) can Diced Tomatoes
1 (4.5 ounce) can Green Chilie Peppers, drained
Open the cans of corn, chicken broth, chunk chicken, black beans, diced tomatoes and green chilies. Pour everything into a large saucepan or stock pot. Simmer over medium heat until chicken is heated through.
